Our Quince Brandy is manufactured exclusively from undamaged and technologically mature fruit.

Full technological maturity, for us, is the moment when the fruit contain the maximum concentration of sugar and aroma so that it reaches a balanced ratio between of sugar, aroma and total amount of fruit acids.

Only fruits which have those qualities can find their place in our quince brandy.

Final selection of healthy fruit is made on a conveyor belt before the degradation of fruit. The degradation of fruit is made in mills which take out fruit seeds without damaging the fruit.

The fermentation of degraded fruit is made in controlled conditions, in a warm process, with application of selected types of yeast.

Immediately after the fermentation process, we proceed to the distillation of the overheated fruit distillate. The distillation is made in Charentais-type still with pauses in process.

Second distillation is made by fractional distillation process. This allows us to obtain the most quality distillate for our brandies.

In order to make a harmonic, soft and delicious brandy with an exquisite bouquet, we leave our brandies age in neutral tanks which keep transparency intact. While they age and mature, our brandies acquire a fine and specific aroma and only then they do become Artania Quince Brandy.
